Biological sex
Sex has to do with biological data.
The definition of biological sex is based on various factors: genetic makeup, genitalia, and hormonal profile. Based on these criteria observed at birth, the newborn is assigned a male or female sex.
Both on a genetic and hormonal level, as well as with regards to the appearance of the external and internal genital organs, human biology is not limited to the two categories of "male" and "female".
Gender
The term gender refers to the way we construct our being women and men, through education and social coexistence, adhering to models of masculinity and femininity that our culture transmits to us daily.
Identity
Identity is the multiplicity of things we are.
There can be more than one because we change and are not always the same. Furthermore, we have an identity that coincides with being born in a particular country, being or feeling Italian, or the opposite of that.
Identity is tied to the various aspects of my life and my career. I can identify as a son or daughter, or an astronaut if my being coincides with my work. I can stop identifying with a specific category or experience.
